In The Kitchen: Blueberry Muffins

This muffins are simply delightful! One recipe yields eight muffins. (Sorry I don't have pictures, I didn't want to bake something I couldn't eat at the moment.) Rest assured, I have tried them several times before, and as many people can attest, they are simply to die for.

To Die For Blueberry Muffins Recipe


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon



Directions

  1. Preheat your oven to 400 degrees. (Don't forget this step, it really saves time later.)
  2. Grease or line 8 muffin cups.
  3. Combine the flour, sugar, salt, and baking powder in a large bowl.
  4. Pour the vegetable oil into a one cup measuring cup. Add the egg to this cup, and pour in enough milk to fill the cup.
  5. Mix together wet and dry ingredients.
  6. Fold in blueberries.
  7. Fill muffin cups mostly to the top, but do not overflow!
  8. Mix together the extra sugar, flour, butter, and cinnamon with a fork, and sprinkle generously over the muffins.
  9. Bake for 20 to 25 minutes.
  10. Enjoy your cups of delicious blueberry goodness!
